I LOVE sweet potatoes and I’m always looking for new ways to incorporate them into my diet. I made a veggie mash up that is perfect for a healthy, yummy lunch this summer.
This sweet potato, squash, and onion mixture is so tasty, you’ll go back for seconds!
What youll need:
2 sweet potatoes
5 squash
1 red onion
Balsamic vinegar
4 tablespoons of butter
I like to put the sweet potatoes in the microwave to soften them. I use the baked potato button or you can just cook it until it’s soft. When it’s done, chop up all of the veggies in chunks.
Add butter to pot and cook down the onions. Next add the squash, add salt and pepper to taste. Let the onions and squash cook down all together then add sweet potatoes. Add approximately 1/8 cup of balsamic vinegar. Add more if needed.
Let it all cook on low, covered for about 10 minutes.
And there you have it; A yummy, healthy summer lunch or side dish! It can be cooked ahead of time and put into containers for a week of deliciousness! I ate this a lot last summer.
